On this occasion, the focus was on Ferrari Trento, widely regarded as Italy’s finest producer of sparkling wine.

The evening was designed as a journey allowing guests to experience different expressions of Ferrari step by step, in perfect harmony with the cuisine.

An Evening with Ferrari - Italy’s Finest Sparkling Wine
The theme of the night centered on Ferrari Trento, a prestigious sparkling wine producer from the Trentino region in northern Italy.
Founded by Giulio Ferrari, who trained in the Champagne region of France, the winery was built on a clear vision to create world-class sparkling wine in Italy.
Today, Ferrari is frequently compared to top Champagne houses and is highly regarded by wine professionals around the world.
During the dinner, guests were guided by AIS Masterclass Sommelier Leonardo Carippo, who led the tasting through Ferrari’s different styles.
This was not merely about drinking wine, but about understanding it, an experience designed to deepen appreciation with every glass.

A Refined Aperitivo on the Terrace
The evening began with an aperitivo on the rooftop terrace. Against the backdrop of Rome at sunset, guests were served the “Happy Bitter Cocktail,” created by bartender Valeria.
A key element of the cocktail was Tassoni, a historic Italian brand founded in 1793.

Best known for its citron-based sodas, Tassoni is considered a benchmark for high-quality craft soft drinks in Italy.
Its natural aroma, gentle bitterness, and balanced sweetness made it an ideal pre-dinner drink, subtly building anticipation for the courses to follow.
Paired with the cocktail was a light snack by Chef Nagano, a crisp nori rice chip topped with tuna and avocado.
Simple yet refined, the dish demonstrated precision and balance, perfectly complementing the freshness of the drink.

The Core of the Experience: Where Wine and Cuisine Converge
fter the aperitivo, guests moved into the dining room, where the pairing dinner truly began. The structure of the evening was carefully designed to showcase the evolution of Ferrari’s style progressing step by step through different expressions.
Perlé Bianco Riserva 2016 × Sushi
The first course featured an elegant Blanc de Blancs, made from 100% Chardonnay. From the moment it was poured, notes of citrus and its fine, persistent bubbles stood out.
It was paired with a vibrant selection of sushi. The wine’s crisp acidity and mineral character cut cleanly through the richness of the fish, while its yeasty complexity resonated with the umami of soy sauce and dashi.
This pairing went beyond simple harmony, it felt as though each element was enhancing the other’s definition.



Perlé Nero Riserva 2018 × Risotto
Next came a Blanc de Noirs made from 100% Pinot Noir, offering greater depth and structure.
The dish, a Parmigiano risotto layered with red shrimp, black truffle, and bonito flakes.
The richness of the cheese, the earthy aroma of truffle, and the savory depth of Japanese umami combined seamlessly with the wine’s body and maturity.
What emerged was not just a pairing, but a moment where flavors resonated and amplified each other as if wine and dish had become one.


Giulio Ferrari Riserva del Fondatore 2015 × Main Course
Finally, the evening reached its climax with Ferrari’s flagship cuvée. With its long aging, the wine displayed remarkable complexity layers of toasted notes, ripe fruit, and a silky, expansive texture that transcended the typical boundaries of sparkling wine.
It was paired with a guinea fowl roulade and vanilla-infused potato purée.
The depth of the wine and the gentle sweetness of the dish intertwined beautifully, creating a pairing reminiscent of a fine aged white wine.
This was not merely the final course, but a dish that symbolized the culmination of the entire experience.



To close the evening, a “Citron Sour” cocktail was served alongside dessert.
The richness of pistachio, the brightness of citrus, and the light acidity of yogurt were lifted by the cocktail’s fresh citrus notes.
After the intensity of the previous courses, this final pairing provided a sense of release bringing the experience to a balanced and elegant close.
