Amaro Don Carlo

10 May, 2026

The first time I saw the name Eboli on a map, the very first thing that came to mind was the famous title by Carlo Levi. “Christ Stopped at Eboli.” Quietly resting inland in the Campania region, south of Naples, this small town became immortalized in world literature through the novel published in 1945. On the hilltop, the old stone town spreads out in overlapping layers, surrounded quietly by olive groves and farmland. In the afternoon, the harsh southern Italian sunlight falls across the dry white walls, while church bells ring in the distance. There is an atmosphere here that feels somehow suspended in time, different from either Rome or Naples.

In recent years, the world of amaro has been expanding rapidly.Driven by the rise of craft culture, new producers continue to enter the market, and back bars are now more diverse than ever before.Yet at the same time, many bartenders have begun to notice something else, more and more amari seem to taste… familiar.Similar botanicals, elevated sweetness, and a strong focus on drinkability. When these elements overlap, what emerges is not individuality, but uniformity.Against this backdrop, Amaro 16.20 presents a clearly different approach.

It is the beginner course called “ABC of Whisky.” The instructor of this course is Diego Galuppi, a whisky specialist from Rome. There is a certain warmth at Fantasie di Napoli, the kind of place where you naturally relax without even noticing. In Rome, the pizzeria has two main locations, the historic flagship in Castelverde and a second, more contemporary space inside Centro Commerciale Gran Roma. One carries a traditional, neighborhood feel, the other offers a modern, approachable atmosphere. Each has its own character, yet both share the same essence.

To understand Italy is, in many ways, to understand its traditions. That idea lies at the heart of what Starhotels is doing today. Starhotels, an Italian hospitality group, has developed a collection of luxury properties under the name Starhotels Collezione, located across some of the country’s most iconic cities, including Florence, Rome, Milan, and Venice. Each hotel preserves the character of its historic building while incorporating contemporary design, creating spaces that feel both timeless and deeply rooted in their surroundings. A stay here goes beyond comfort, offering a sense of place that reflects each destination. The group has also launched a project called La Grande Bellezza.
